Green Quinoa Burgers

There is a simple joy in shaping food with your hands. These little green veggie burgers are crisp on the outside, soft on the inside, and perfect for bringing a bit of calm to your day.

They combine sweet roasted squash, fluffy quinoa, and steamed greens, held together with creamy goat's cheese and fresh herbs. A cool yogurt sauce goes on top. They make a wonderful light lunch or an easy snack to keep in the fridge.

Ingredients (Makes 20 mini-burgers)

For the burgers:

  • 1 butternut squash, peeled and chopped into tiny cubes
  • 3 tablespoons coconut oil, melted
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • A pinch of turmeric powder (for color and flavor)
  • A tiny pinch of cinnamon powder
  • 1 teaspoon sea salt
  • 350g cooked quinoa
  • 200g chard or spinach leaves, lightly steamed
  • 2 spring onions, finely sliced
  • 135g goat's cheese, crumbled
  • 1 small bunch of parsley, finely chopped
  • 2 eggs, lightly beaten
  • 1 teaspoon salt and a little black pepper
  • 45g rice flour
  • 1 teaspoon sesame seeds
  • A pinch of black seeds (Kalonji), optional

For the sauce:

  • 3 tablespoons plain yogurt
  • Juice of ½ lemon
  • A few fresh dill leaves, chopped

How to Make Them

  1. Roast the squash: Toss the squash cubes with the coconut oil, cumin, coriander, turmeric, cinnamon, and salt. Roast in the oven until soft.
  2. Mix it up: In a large bowl, mix the roasted squash with the cooked quinoa, steamed greens, spring onions, goat's cheese, parsley, eggs, salt, and pepper. Stir in just enough rice flour to help the mixture hold its shape.
  3. Chill and shape: Put the mixture in the fridge for 30 minutes to firm up. Afterward, shape them into small patties and sprinkle the tops with sesame and black seeds.
  4. Cook: Cook the burgers in a pan with a little coconut oil until brown on both sides, then pop them in a warm oven for a few minutes to cook through.
  5. Serve: Mix the yogurt, lemon juice, and dill together. Drizzle it over the warm   burgers.
