Chicory root is the root portion of the chicory vegetable and is often used as a substitute for coffee, after being roasted and ground. Inulin, a fibre derived from chicory root, is often added to food products to boost the fibre content. Inulin also acts as a prebiotic, that encourages the growth of healthy gut bacteria. Inulin, along with the other compounds in chicory root, may help control blood sugar levels, especially in diabetes.
