Looking for a vibrant, plant-based centrepiece that brings a sense of ritual to your dinner table? This golden dish is all about balance: hearty yet refreshing, earthy yet bright. Thick-cut cauliflower steaks are brushed with turmeric-infused coconut oil and roasted until beautifully burnished, then served over pesto-massaged kale with olive-stuffed mushrooms and sweet clementine.
Ingredients
The Steaks: 2 small cauliflower heads, 90ml melted coconut oil, 2 tsp Organic Turmeric Powder
Pesto & Kale: 250g sun-dried tomatoes, 100ml extra virgin olive oil, 40g blanched almonds, 1 garlic clove (plus a pinch of Natural Garlic Powder), ½ tsp dried oregano, ½ tsp sea salt, ½ tbsp balsamic vinegar, 500g kale (torn)
Stuffed Mushrooms: 12 chestnut mushrooms, 2 red chicory heads, 150g pitted olives, 2 garlic cloves, salt, a pinch of Turmeric Black Pepper Powder
Garnish: 4 clementine segments
Method
Roast the Steaks: Preheat oven to 180°C fan. Cut two thick slices from each cauliflower and place on a lined tray. Warm the coconut oil, stir in the turmeric, brush generously over the steaks, and roast for 25 minutes until golden.
Make the Pesto: Blitz all pesto ingredients (except kale) until smooth. Massage 4 tablespoons of this rich pesto into the torn kale until softened.
Stuff the Mushrooms: Reserve a few chicory leaves for plating. Finely chop the remaining chicory, olives, and garlic. Season with salt and Turmeric Black Pepper Powder, fill the mushroom caps, and bake for 10 minutes.
Plate and Serve: Layer the pesto-massaged kale, top with a golden cauliflower steak, and tuck reserved chicory leaves underneath. Scatter the stuffed mushrooms and garnish with sweet clementine segments.
